Partially Eaten Cupcakes

At a party last week I started noticing how people eat cupcakes.  Some eat the frosting off the top first.  Some cut the cupcake in half and then start.  Some just dive right in.  The result is a roomful of partially eaten cupcakes!

Baking today!

I have been baking all day today so I am late getting to the computer.  This weekend is my friend Ellen's 50th birthday party and we must have cakes!   I was trying to decide how to decorate and then I found this cupcake picture on Flickr...I think it says it all.

Recipe of the Week - White Velvet Cupcakes with Mango Buttercream

Week 47

Most people think of Red Velvet when they think of "velvet" cupcakes....but there are many flavors.  Here is a recipe for White Velvet Cupcakes with Mango Buttercream!








White Velvet CupCakes

3 cups cake flour - sifted
1/4 cup buttermilk
4 eggs
2 tsp. vanilla
1 1/2 cups sugar
4 1/2 teaspoons baking powder
3/4 teaspoon salt
1 1/2 sticks unsalted butter
3/4 cup buttermilk

Preheat oven to 350 degrees.  Combine eggs, vanilla and 1/4 cup buttermilk.  Beat with a fork and set aside.

Combine flour, sugar, baking powder and salt. Mix on low for 30 seconds.  Add butter and mix on low for 30 seconds or until butter is cut in.

Add 3/4 cup buttermilk. Mix on low until everything is moistened. Scrape bowl and increase speed to medium. Beat for 2 minutes. Scrape, and gradually add egg mixture. Beat well after each addition.

Fill cupcake liners 3/4 full and bake for 18-20 minutes, checking frequently after 15 minutes. 


Mango Buttercream

1/8 cup powdered milk
1/4  teaspoon salt
hot water
1/8 cup mango puree
1/4 teaspoon vanilla
1 cup (2 sticks) unsalted butter - room temperature
8 cups powdered sugar
 
In a glass measuring cup, combine powdered milk, salt and just enough hot water to cover. Stir to dissolve powdered milk.  Add mango puree, vanilla and more hot water to make 1 cup of liquid. Stir to combine, then set aside.

In a mixing bowl, combine butter and 2 pounds (8 cups) powdered sugar. Beat on low to combine, then slowly add the milk mixture. Beat on low for 10 minutes.

Fondant Daisies & BumbleBees

I am making 4 dozen cupcakes for a friend's party this week...so yesterday I made daisies and bumblebees to put on top of the cupcakes.  It was my first time to make the bumblebees, but I watched videos and followed instructions exactly.  They were very easy to make and turned out great.
