Recipe of the Week - Orange Cream Cheese Icing

The New Year brings football....and the Orange Bowl is tomorrow.  So why not feature orange cream cheese icing.  Make some cupcakes and enjoy the game!

Orange Cream Cheese Icing

1/2 cup (1 stick) unsalted butter, softened

3 packages (8 ounces each) cream cheese, softened
3 tablespoons orange juice
1 tablespoon orange zest
4-5 cups confectioners' sugar
In a large bowl, beat butter, cream cheese, juice and zest with electric mixer until light and fluffy.  Add confectioners’ sugar one cup at a time, beating until light and fluffy. If icing is too thin add additional confectioners’ sugar 1 tablespoon at a time.

Angry Birds

I am addicted to Angry Birds - an app that I wish I had never found. I downloaded it to my iPod Touch and playing this game makes me almost as angry as the birds.  Here's the deal....green pigs have stolen the eggs of the birds and now the birds are angry.  You shoot birds out of a slingshot and try to destroy the pigs.  Good luck!

Kwanzaa Cupcakes

Kwanzaa is a weeklong celebration held in the United States honoring universal African-American heritage and culture, and is observed from December 26th to January 1st each year. It features activities such as lighting a candle holder with seven candles and culminates in a feast and gift-giving. It was created by Maulana Karenga and was first celebrated in 1966-1967 (Wikipedia).  Each of the seven days of Kwanzaa is dedicated to one of the following principles:


Umoja (Unity): To strive for and to maintain unity in the family, community, nation, and race.

Kujichagulia (Self-Determination): To define ourselves, name ourselves, create for ourselves, and speak for ourselves.

Ujima (Collective Work and Responsibility): To build and maintain our community together and make our brothers' and sisters' problems our problems, and to solve them together.

Ujamaa (Cooperative Economics): To build and maintain our own stores, shops, and other businesses and to profit from them together.

Nia (Purpose): To make our collective vocation the building and developing of our community in order to restore our people to their traditional greatness.

Kuumba (Creativity): To do always as much as we can, in the way we can, in order to leave our community more beautiful and beneficial than we inherited it.

Imani (Faith): To believe with all our heart in our people, our parents, our teachers, our leaders, and the righteousness and victory of our struggle.

Christmas RVCs - revisited

I just got off the plane and am finally home after a great Christmas!  Here are more pictures detailing the making of the red velvet cupcakes on Christmas Eve.  A fun time was had by all....especially eating them.

Sorry...but I have been overserved this Christmas weekend so I cannot post a recipe today. I will rest my gastrointestinal system and return tomorrow. Visions of New Year's cupcakes are dancing in my head!

Christmas Eve Cupcakes

My niece has been emailing me for weeks with her request to make red velvet cupcakes (we call them RVCs) with cream cheese icing.  This afternoon we made them...and my brother captured the decorating process on video - see "Maidee's first cupcakes 1" on You Tube if you dare.

P.S.  Hope Santa puts some RVCs in your stockings tonight!
