Recipe of the Week - Mocha Madness Cupcakes

It was a cold and windy day today around Lake Tahoe, although the forecast was for a nice sunny weekend.  Oh's Nevada and if you don't like the weather you just wait five minutes and it will change.  Anyway, I was having a hot cup of java and started thinking about this week's recipe.  Mocha Madness cupcakes sounded like a good idea. 

Mocha Madness Cupcakes
1 tablespoon instant espresso coffee (dry)
1 1/3 cups milk
1 box Devil's Food cake mix
Vegetable oil and eggs called for on cake mix box

Preheat oven to 350 degrees.  Prepare muffin tins with cupcake liners.  Dissolve 1 tablespoon coffee in 1 1/3 cups warm milk. Make cake batter as directed on box, using coffee mixture in place of the water. Bake as directed and cool completely.

Frost with your favorite vanilla buttercream.
