Recipe Correction (from December 13, 2009)

A reader emailed me yesterday because he/she noticed a mistake in one of my recipes of the week.  On December 13, 2009, I posted a recipe for Chocolate Amaretto cupcakes....but I left out the chocolate!  Please add 1/3 cup of cocoa to this recipe.

To whom it may concern....thanks for picking up this mistake!

Recipe of the Week - Black Forest Cupcakes

One of my favorite desserts this time of year is Black Forest Cake.  The first time I had this cake was about 20 years ago when a friend of mine had a Christmas party and ordered one from a local bakery to have for dessert.  It was fabulous (and incredibly expensive as I remember).  I thought it was the most decadent and delicious thing I had ever tasted.

Luckily, you can make Black Forest cupcakes without spending a fortune.  This week's recipe is from Sunny Anderson of the Food Network....click on the photo to get the recipe.

P.S.  I like to fill the cupcakes with cherry pie filling instead of putting the cherry on top!

Sorry for the lack of posting today.  We got 10 inches of snow and I am by myself at home....so I have to plow (our driveway is one mile long) and then do some shoveling and get out the snowblower.

Egg Bowl Score

Sadly...the Ole Miss Rebels did not take home the Egg Bowl trophy tonight.

Egg Bowl Cupcakes: Ole Miss vs. MS State

Ole Miss (the University of Mississippi) and Mississippi State University are playing in the Egg Bowl today.  It is a state rivalry that is always emotional and no matter how the teams have played during a season, there is no way to predict what will happen in this game.  I was a freshman at Ole Miss in 1976, and still get goosebumps when I hear Dixie and the players enter the stadium!  However, the recent mascot selection has my feathers ruffled so I cannot and will not call them the Rebel Black Bears.  But I digress...

Black Friday Cupcakes

It's the day after Thanksgiving...Black Friday.  Some of you won't read this blog today because you got up at 3 AM to go shopping, and now you are taking a nap.  Hope you found lots of bargains!  I never leave the house the day after Thanksgiving.  My Black Friday philosophy is...just stay home and bake cupcakes.

Lady Bug Cupcakes

Coccinella Septempunctata. The lady bug. Beneficial garden inhabitant (eats aphids). Over 450 species found in North America.  Not all are red & black - some are orange and yellow.  Associated with traditions:  if a ladybug lands on you, your wish will be granted;  if a ladybug crawls across a girl's hand, she will marry within the year.

Animal Print Cupcakes

I love animal prints...especially on a cupcake!  Duff Goldman (Ace of Cakes & Charm City Cakes) has animal print cake transfer products that you can also use on cupcakes and cookies.  I saw them for $11.99 at our Wal-Mart and Michael's in Carson City so they are easy to find!

Recipe of the Week - Mocha Madness Cupcakes

It was a cold and windy day today around Lake Tahoe, although the forecast was for a nice sunny weekend.  Oh well...it's Nevada and if you don't like the weather you just wait five minutes and it will change.  Anyway, I was having a hot cup of java and started thinking about this week's recipe.  Mocha Madness cupcakes sounded like a good idea. 



 
Mocha Madness Cupcakes
1 tablespoon instant espresso coffee (dry)
1 1/3 cups milk
1 box Devil's Food cake mix
Vegetable oil and eggs called for on cake mix box

Preheat oven to 350 degrees.  Prepare muffin tins with cupcake liners.  Dissolve 1 tablespoon coffee in 1 1/3 cups warm milk. Make cake batter as directed on box, using coffee mixture in place of the water. Bake as directed and cool completely.

Frost with your favorite vanilla buttercream.

Mix Cupcake Co. - Reno, NV

I just came across a cupcake bakery that I wasn't aware of...and it's in my own back yard!  Mix Cupcake Co. was featured in an article in Reno Passport magazine and that is how I came to know about them. Not wanting to pass up the opportunity to eat a cupcake, I had to check them out!  While you are visiting their web site, be sure to read about their Cupcake Fairy program...they periodically choose someone from among their Facebook fans and send them a box of four cupcakes. Sweet (literally).  BTW - they deliver!

Veterans Day

November 11th is Veterans Day, also known as Armistice Day or Remembrance Day.  It commemorates the signing of the Armistice that ended World War I....on the 11th hour of the 11th day of the 11th month of 1918.  (The U.S. government declared that there would be no apostrophe in the official spelling.)

On this day, we honor our veterans and those currently serving in our military!  Thank you!
